Ant and I talk a lot about our dreams of the future. We both want to have adventures (even more adventures, I should say) and travel the world, get to know amazing people, and have a family. We’ve been doing pretty well on all fronts, (particularly if you include “have a family” as “get a ridiculous adorable dog”) but we also dream of having a real veggie garden someday that produces enough food to sustain our needs. A few weeks ago, Anthony and I celebrated our second anniversary (it was actually celebrated a few months late, but whose counting) by going up to Byron Bay, about an hour and a half south of us. We had an incredible weekend (I’ll post more about where we stayed and the weekend soon) but one of our favorite parts was going to Gaia retreat, an incredible spa and wellness center in Bangalow, New South Wales.![]()

I love the little details – it was a white chocolate and sea-salt body scrub, so they had the ingredients laid out. ![]()
Gaia is overloaded with gorgeous details from the food to the decorations, but what was most special about it to us is it has our dream veggie garden.![]()
It is so beautiful, and filled to the brim with amazing varieties of delectables, from lettuces to carrots to herbs.’
We’ve talked so often since then about that garden, and how we’d love to cultivate that in our future homes. Manifesting, everyone!
Breakfast:
Was my new usual, a big bowl of veggies with tahini. Dreamy.
With a cherry tomato on top from our own cherry tomato tree/bush! We’re starting our garden on our patio.
Lunch:
Can’t even talk about how delicious this was. Zucchini pasta, topped with tahini (a little addicted, I think?) sauteed cherry tomatoes and onions, two eggs, and sunflower seeds. Drool-worthy.
Dinner:
Was pizza! Since my mom told me the photos from the last post were terrible, here are some nicer ones which better reflect the majesty of this dish.
Topped with pesto, rocket, sliced tomato, chicken sausage and a touch of parmesan. Heavenly.![]()
